The Salad Formula: Grilled Asparagus Cous Cous Salad

Serves: 2 as a main or 4 as a side

 

Ingredients:

Grain base: Cous cous and Good4U Lentil Sprouts

Protein: Edamame beans

Colour: Asparagus, capers, radishes

Dressing recipe:

2 tbsp extra-virgin olive oil

1 tbsp white wine vinegar

1 tsp Dijon mustard

1 tsp fresh thyme leaves

¼ tsp pure maple syrup

¼ tsp sea salt

Black pepper

2 tbsp water

Method:

  1. Cook the cous cous according to package instructions, and place in the bowl with a layer of lentil sprouts.
  2. Coat the asparagus in salt, pepper and olive oil, and place under the grill or fry in a saucepan until soft.
  3. Add the edamame beans, sliced radish and capers to the salad bowl.
  4. Make your dressing by combining all dressing ingredients, then pour over the salad.
  5. Sprinkle with the salad topper and mix everything together.
  6. Add the grilled asparagus on top, sprinkle with the lentil sprouts and serve!
